Happy new month guys! Welcome to February, it’s going to be awesome! So we’re starting the month on a yummy note, quite literally and you’ll see why inna bit! Couscous is one meal I’ve been itching to try out for a long time now, and with this post, I just might! For those who don’t know, couscous is a dish that originates from the eastern and northern part of Africa and is eating as a staple dish across these parts. It looks like rice but it’s actually made from semolina. In today’s post, our guest blogger Aisha of Aishazkitchen , takes us through a very easy and rather interesting method of preparing the Nigerian stir fry couscous accompanied with grilled chicken. Yum!
MADE BY AISHAZKITCHEN
LIST OF INGREDIENTS
1.400g of couscous
2. 2 ½ cups of water
3. 1 large red onion
4. 2 cups of frozen mixed vegetables (carrots, peas and sweetcorn)
5.1 ½ cooking spoons of sunflower oil
6. 1 large red bell pepper
7. 2 seasoning cubes (knorr cubes)
8. 2 teaspoons of onga (seasoning powder)
9. 1 teaspoon of curry
10. 1 teaspoon of each herb (dried oregano and parsley)
11.1 teaspoon of each (powdered garlic, ginger, black pepper, chili and paprika)
12. A splash of soya sauce.
400g of couscous which is 2 cups of couscous can serve 3 people generously.
Cooking time = 30 minutes
DIRECTIONS FOR COOKING
1- Place a pot on medium high heat with 2 cups of water , add a splash of soya sauce and allow to come to a boil for 7 minutes
2- Pour couscous into the boiled water , cover the pot with the lid and set aside for 7 minutes for it to steam
3- In a wok add cooking oil, chopped onions, dried herbs, garlic and ginger. Leave it on medium high heat for 5minutes or until the onions become translucent
4- Add in frozen vegetables with seasoning cubes, seasoning powder, curry, chilli and paprika powder. Stir fry for another 5mins to get the blend of all the seasoning
5- Divide the vegetables you stir fried into half , and leave the first half in the wok
6- Add the steamed couscous into the half portion of the vegetables in the wok and stir for another 5 minutes
7- Repeat the last step with the other half of the vegetables.
DON’T FORGET TO TASTE BEFORE SERVING YOUR MEAL.
